I dropped my wife off at the airport so she could fly to Florida to be with her mother for Thanksgiving. My youngest son is headed over around noon to hang a few hours while his girlfriend has dinner with her family.
So being down my wife and other children, I am planning a non-traditional turkey day. No turkey on the table today. My butcher had some nice prime strip steaks in the case. I had him cut me a almost 5lb "steak" which I will roast, fat side up. I have had it aging for 6 days so it is starting to dry down nicely. It will be roasted at 450 for 15 minutes, then down to 300 for maybe 30 minutes when I start checking the internal, pulling at 120-125, then rest for 20 minutes.
To go along I have garlic mashed potato's and mixed veggies in a cheese sauce.
I haven't picked the wine as of yet. Just one of the ready to drink bottles. Not one of my aged bottles that need to be prepped several days before decanting.
Before I have some shrimp and a few cheese selections to nibble on while watching the Lions game.

My hens. Arent they cute?
My hens. Arent they cute?
They must make Rock Cornish Hens bigger in the South. Every time I see them at the grocery up here, they look the size of pigeons. Those look like rotisserie chickens. Yum.
I use to do those in the east village for friends who didnt have anything to do on Thanksgiving. I would do a half dozen and split them.

They look bigger than they are. They fit in the palm of my hand.
Well, however big they are, they look really good. My wife used to stuff them, make redskin potatoes with parsley butter, and fresh green beans. A fave dinner ...
Thank you! They tasted great!
I always put a half orange in the cavity.
I will have to try that. That sounds good. I didnt stuff them with anything.
maybe 1/4 I forget what would fit and salt and pepper
I always put a half orange in the cavity.
I use lemon and rosemary with some butter

When I used to eat meat we would stuff our chicken w/lemon as well.
We baked our salmon with lemon, which helps keep it moist, but also gives it that lemony tang.
Oh yeah smear butter inside then salt and pepper then orange, onion, garlic and rosemary
I had 2 smokers going....a 12lb turkey and 4lbs of kielbasa in one, and 6lbs of salmon in the other. Nothing like tending the fires on a brisk Thanksgiving morning while downing a few cold ones.
I have never even heard of melted broccoli before.
I thought you were alive during the 70's? Maybe you should have been smoking stronger stuff.
Yes. Let's cook food with a flamethrower lol.

only if you have a turkey hat
That's what's called a reverse-sear-on-steroids.
360 days a year to eat the seared steak and shrimp combo plus.
What's on the menu on thanksgiving?
Turkey? Turkey...
Stuffing?, stuffing...
Pumpkin pie! pumpkin pie.
add to it what you will.
It's a Patriotic duty almost.

Luckily for us, the first Thanksgiving dinner back in 1620 (or so) was something pretty good, like turkey. What if the first Thanksgiving dinner had been something disgusting like haggis, pineapple pizza, or the Impossible Burger? Because I'm not eating any of those, traditional or not. I don't even go to Burger King anymore because they might accidently (or purposely) give me a vegetable-based burger.
They had all of those, our forefathers' weren't stupid enough to not stop eating them.
Funny how things that don't taste good, might not continue through 10 generations of tradition.

I just read that 8 times and I still don't know what you are saying.
1. Full Bird Turkey (Special seasoning rub on skin)
2. Stuffing (not dressing). Yes- stuffing cooked in bird's cavity- it's an art+science).
3. Mashed (Yukon Gold) potatoes.
4. Turkey gravy.
5. Roasted Brussels Sprouts with chestnuts
6. Cranberry sauce (crushed from fresh), flavored with cinnamon/clove/rosemary, and fine-chopped chipotles in adobo (spicyyy....)
7. Sweet potato/Pecan/Pumpkin/Apple pie
I'm certain that I'm forgetting at least 2-3 sides, but presently, I'm falling victim to the effects of L Triptophan...
talk soon,
Clembolicious.
bzzzzzzzz......

I had a great taste of a few pies the past few days: strawberry, apple, pumpkin, peanut butter ... I may have also gained 10 lbs, but who’s counting

I mostly agree. The problem was numbers. My wife is in Florida to be with her mother. My 2 oldest are in other states and were going to do things with their in-laws family this year, my youngest was staying here, so I stayed to be with him for the day. I didn't want to have mounds of turkey left over, so went with the roast.
What if the first Thanksgiving dinner had been something disgusting like haggis,
I don't eat meat anymore, however, I have been to Scotland and had traditional haggis and it is a lot better than people think. IT was even piped in w/bagpipes and people wearing traditional Scottish clothing. It's only the casing that looks rather revolting (a grey loaf), but it is no different than the casing of a true sausage and once it is split open you serve what is cooked inside, which tastes like peppered meat. Corned beef hash or Scrapple (those on the mid-Atlantic coast will know what Scrapple is) immediately comes to mind.
Black pudding, however....now that
IS disgusting. That is served with breakfast along with fried eggs, baked beans, fried tomatoes, bacon etc.
