Definatly get the whole chunk charcoal
No doubt.....but you have to be careful...a few brands spit embers until the coals are nearly burnt out.
The brand I have found to work best is Cowboys....no pine or whatever it is that causes some of the others to spit embers the entire burn.
As you said, it burns even and leaves very little ash....burns so clean you don't have to empty the ash tray but maybe every 4th grilling.
It is also easy to light.....you need very little fluid to get it going, or sometimes if I am smoking up some pork butts, I light it with a propane torch.
If everybody had like minds, we would never learn. GM Strong

Just got done eating me a steak.....tried the garlic and butter thing. Tasted pretty good.......until I stabbed myself in the face with a friggin' corn on the cob holder. Ouch.

Hey man how are you? Hope this finds you and yours well... I buy hard wood chunk charcoal only, Cowboy, lump is what I use too. I have a starter chimney. Have had it for a long time. So easy... Just wad up a couple pieces of paper in the bottom and load the lump in the top and light the paper. In 15 or 20 minutes you have hot lump ready to go... Very environmentally clean & sound... Chimney's are inexpensive I saw a good one a couple of weeks ago for only $8.00. Haven’t used fluid for over a decade… I do a lot of smoking, pork butts & shoulder, lots of beef brisket, turkey, chicken, spare and baby back ribs, lots of elk and some deer. Do a fair amount of salmon too. If I have grouse I like to smoke them now and then too. They don't last long around these parts... Hum, grouse is good! A buddy and I do a couple pigs a year too. One we do luau style his wife’s side of the fam is Hawaiian... Take care brother. Hungry now... Gonna go roast/Q a duck, Wish me luck.

Apparently working in a butcher shop for 3 years let me pick up on something! I love those things. I've never tried the tri-tip. I've heard good things, they just sell at a higher price point than Chuck Eye, and as a college student that dollar a pound means alot!
