A friend of mine told me about trying this recipe for wings, and how good they were. I asked him to send me the link. Let's set aside for the moment that two dudes are exchanging recipes ... I was interested because deep frying is such a PITA, but too often if you don't deep fry you end up with too saucy/sloppy wings, or wings that aren't crispy. Anyhoo, I think I'll give it a try.

So what are you cooking Sunday?

Crispy Baked Chicken Wings Recipe

Ingredients:

•2 lbs chicken wing pieces

•salt

•3 tbsp Frank’s hot sauce

•2 tbsp butter

•dash of worcestershire sauce

•ground cayenne pepper to taste, optional

Directions:

1.Preheat the oven to 450 degrees F.

2.Heat up a big pot of boiling water. Season the water like you would for cooking pasta (taste the water, it should taste a little repulsively salty, like sea water).

3.Boil the chicken wings for 7-8 minutes, then remove them to a wire rack so the excess water can drain off. Let them drip dry a little bit, then dry them well with a paper towel.

4.Place the chicken wings directly on a sheet pan. Bake the chicken wings for 25-30 minutes on one side, then flip the wings and bake for another 5 minutes on the other side. The wings should have crispy crackly golden skin on the side that was in contact with the sheet pan.

5.In a small saucepan or in the microwave, heat up the hot sauce, butter, worcestershire sauce and cayenne pepper, if using, until melted and combined. Toss the hot wings in the sauce, and serve immediately. Gobble them up while they’re still crisp, and coated with sauce.

*Note about cooking time: Chicken wings sold in grocery stores vary in size, so if you have smaller wings, you will probably only need to bake them for a total of 25-30 minutes. I’ve always done around 40 for mine, but they’ve been large wings.

I'm getting ready to put a pork butt in the smoker for the game tomorrow. I'm going to smoke it all day today, pull it and put it in the crock pot for tomorrow. I might fry up some wings as well.

I'm a chef by trade, so guys sharing recipes is anything but odd....

Me and two of my friends, (all 60+), get together sometimes on a weekend night to drink a few beers, tell lies and play some music. We have come to know when it's time to break it up when we start discussing recipes, (it means we're hungry, lol).

Sometimes one of us will bring something to eat in a crock pot. The recipe discussion is the alert that it's time to eat. Once sated we don't talk recipes anymore, lol.

Nothing strange about it, this thread comes up every year. A lot of the guys here would put most women to shame with their cooking. Lots of men cook now, it's not the 50s and 60s anymore, haha. I think it's more odd to think this thread would be odd. wink

Anyway, I'm making wings....and I just might try your recipe, Dave. I don't feel like going through the mess of frying, but like the crispy. I'll probably try it now that I've seen that, thanks. I'm also making a jalapeño popper cheese dip. Veggies and dip too.

I'm near the San Francisco area right now. Lot's of buzz, hype, and it's crowded everywhere! I'll kind of be happy when tomorrow is over.

I usually smoke my wings for a few hours then put them over direct heat to crisp them up for about 10 minutes. Toss in sauce and good to go!

That sounds good!! I usually par bake the wings until they're cooked through. It helps cut back on the cook time in the fryer and they get really crispy. Saves the oil as well.

Sloppy chicken sandwiches. Venison backstrap and loin medallions. Veggie tray, a couple of cheesy dips. Chips.

11 of us will be here. We'll have food to feed 20. All of it is good as left overs.

No time to cook today!

All day I been messing with the color settings on my tv and I almost got it to where MY BROWNS will be playing in the Superbowl tonight!

Now I just gotta get rid of that jackass on Denver's helmets.

Not having a party for the first time in a long time. Just making bacon cheeseburgers on the grill and nachos to snack on.

All rubs and sauces are homemade....

Step 1, olive oil and rub for 2 hours:

Step 2, buttermilk brine for 2 hours:

Step 3, make the BBQ sauce - nothing spicy this time just a nice tomato based honey BBQ:

Step 4, on the smoker (Big Green Egg) with Hickory chunks for ~1.5 hours:

Results will be posted when the smoking and eating is complete....

And the finished product - ended up 1h on the smoker, probably the best wings I've ever made.

Those look great, Columbus. The wings from the recipe I posted above were pretty good, but the sauce you're supposed to toss them in was just so-so, plus it didn't stick to the wings very well. Still better than a sharp stick in the eye, though. Another thing - the recipe didn't say to grease the pan, so I didn't. I should have, a lot of the "crispy" got stuck on the baking sheet.

14 lbs. of slow roasted pork shoulder in 7-UP with garlic, oregano, and a small yellow onion for 6+ hours. Served with black beans, rice, and limes. Mmmmmmmmmmm......

I baked some chicken wings too. They were a little dry but were pull-apart-tender.
