OK. So my Spectrum (Time Warner) cable, internet & phone bundle just got jacked way up to over $200 / mo. This is without any premium content, but whole house DVR (3 TVs)

I really only watch a hand full of stations:

My MUST HAVES:
Sports Time Ohio for the Tribe
Fox Sports OHio for Cavs, etc.
All the biased News stations (CNN, MSNBC,FOX) so I can stay angry and bitter.
Food Network
AMC (Walking Dead, Better Call Saul, enything else they put out)

Sling TV or PlayStation Vue are starting to look like options. I did hear that Sling is working on time shifting so that would eventually contain DVR service. It looks like I can get pretty much everything I need from Sling TV for $50. Couple that with Internet at about $70, Netflix and or Hulu and I am good for much less.

What do you do to cut the cable and still get all CLE sports?

ATT U Verse cable internet and a Amazon Fire TV Box running Kodi with an Ares build.

You can have Netflix and a bunch of free viewing apps on the Amazon Fire to beging with, and the Kodi will give you just about every TV show and movie known to man. I have watched 2017 release movies on Kodi a few days before they were even released in the movie theaters

To me the hardest part for you when it comes to sports is going to be the quality. You can find streams of NFL games but quality can vary and sometimes it can be frustrating. I believe MLB has streaming packages on Roku boxes if my memory serves me. If the NFL could get their crap together and offer a digital package to get me every Browns game than I'm all in.

As was mentioned, Kodi can get you just about every show you want to watch and movies too though if you are looking at movies in the theaters its most likely going to be cam versions which just drive me crazy.

Sometimes, its kind of hit or miss on the new releases.
