My wife and I had one of the best prepared foie gras dishes to date when we dined at L'Altier out in Vegas. One of the best dining experiences I've ever had.
Keep the foie gras coming!

Foie gras & black truffles.... ::drooling::: Sign me up for some true Beef Wellington!  The fattening process also makes for some truly exceptional duck breast... which a side product is that the cooking of which renders out lots of very healthy duck fat - which is great as a base for a roux, or just for making fries!
