I ALWAYS put it in my chili! Good burgers too. If you haven't tried a Bison burger you're missing out.

Bison is one of six meats I use in my "6 Animal Chili":

1. Buffalo (ground)
2. Chicken (ground)
3, Turkey (ground)
4. Cow (cubed pieces)
5. Pig (bacon pieces sprinkled in the bowl)
6. Lamb (ground)

Number 6 usually depends on what my local butcher has under the glass that day.

I went to BGSU, before it changed hands - there was an awesome pizza place called Myles. We'd always get buffalo meat and pineapple pizza.

Buffalo/Bison is awesome. Additionally, try ostrich, even better in my opinion.

it's the BEST!

I made some burgers akin to Punch's chili not long ago:

I mixed 1 lb Bison, 1lb Lamb and 1lb Ground Sirloin with a bunch of spices and some worschestershire and made a bunch of some of the best damn burgers ever

We've had both Buffalo and Ostrich in our area of Niagara for quite a while now. I've never had a hankering to trying them yet. What's the price per lb. in the States, BTW?

One fact I do know is that Buffalo meat is much leaner than cattle beef.

We have a few restaurants here in town that serves Buffalo.....good lean meat with a good flavor.

Ted Turner, who went to one of the two big time private HS's here in town has one of the, if not the largest heard of Buffalo for commercial purposes in the country.

I thought they were endangered. (?)

I met a buffalo one day at my friend's farm. He was quite peaceful and I never once wondered what he tasted like.

Ruby Teusdays has a GREAT Buffalo Burger Starglow. Just in case you would like one some time.

Intoducing for The Cleveland Browns, Quarterback Deshawn "The Predator" Watson. He will also be the one to choose your next head coach.

The Bison used to be, it has long since rebounded to the point that it is now a viable livestock.

I worked at Myles back in the early 90's. Best toppings in town. Though I liked Pisanello's crust better.
When did it change ownership?

Perhaps I purchased pizza from you then. I went to BG from 91-93. And I LOVED Myles pizza. My girlfriends and I used to go all the time. Didn't do Pisanello's as often, it was a further walk for us.

Haven't been there for YEARS though

Back to actual topic on hand. I like buffalo meat alot. I usually get it when I'm out in Colorado (since it's fairly abundant out there). Of course, I also get alot of fresh river trout as well. YUM!

True for the most part. The US buffalo was actually driven to extinction for the most part, but they imported and repopulated from Canadian herds. The ones used for meat are raised like cows though, not like the cull the heard in Yellowstone for that (though I'm sure they do that periodically too).

Love the stuff! Tried it for the first time out in Colorado several years ago and have been eating the stuff whenever I see on the menu. Lots of great flavor and very lean.

Ted's Montana Grill opened up here about 6-8 months ago, and they have Bison.

It's very good, a lil more lean that typical steaks, and I think maybe even a little sweeter taste. Not sure the extra cost at the restaurant is worth it though. They make great regular steaks as well.

But their bison pot roast is excellent.

I would like to try it on the grill at home. In the opinion of people who have had it, and cooked it themselves, is it necessary to add other meat to it, or is it good by itself?

IMO, Bison is fine on its own. It takes to seasoning very well, but you really don't need much because the meat brings a lot of flavor to the party to begin with.

One word of caution, however, this meat is very lean and it will dry out if you over-cook it. Once you get to medium, you're entering the "danger zone" so be careful and don't forget about residual heat.

It's perfectly good by itself, no need to mix it with anything.... I just added the other meats more because I had just gotten back from the market with a bunch of stuff that day and thought "hey! this would be good"

It was

As for seasonings, I can't offer any real suggestions as I just wing-it when I cook, so I don't really know what would be good with it.... I can't even recall what I used beyond worschestireshire, salt & pepper.

I worked at the Taco Bell there (at least the first year). I walked out on them because they allowed a guy to stalk (schedule us at the same time even after they knew he was stalking), schedule me when I was supposed to be in class, then write me up for missing work. So, I let them schedule me and I no showed for 2 weeks, called them and said, consider those no-shows as my 2 weeks notice.
