I like steaks medium rare. No sense spending that much money on eating a baseball glove.
I'm Italian and we eat a lot of Italian. Lasagna, pasta fagioli, ravioli, Italian wedding soup, etc...
I also make some damn good stuffed peppers. Family wants me to market them...LOL
I also love seafood and have come up w/some good recipes. I know this sounds weird, but Catfish is a great-tasting dish if prepared correctly.
I'm real big on making soups and sauces.
I have shared some of my recipes w/the people I used to teach with and they are always texting me for some new ideas.
Love to cook. Hate cleaning up.

Seafood .... Mussels, scallops, trout, salmon. A feed of mussels, scallops, Caesar salad and garlic bread is heavenly.... Even though lobster caught off the coast of Nova Scotia might be the best in the world, I find lobster bland. Many love it, though.
Deer meat is awesome too, when prepared correctly.

I've come to really enjoy cooking, and learning different recipes.
I enjoy my steak medium-rare to flat out rare. I learned how to reverse sear my steaks and haven't looked back...
I also learned to make my own hash browns. I coupled that with breakfast tacos that I make on the weekends.
Never though I'd enjoy cooking as much as I have.

I learned how to reverse sear my steaks and haven't looked back... yeahyourite. However- every once in awhile, I just need to grill me a piece of animal. Hot side/cool side is the only way to go. Heat one half of the grill to blazinhot with 3/4 or your charcoal. Space the other 1/4 out evenly on the cool side. Sear your cow 2 min and rotate to get those crosshatch sear marks Continue sear for another 1-2. Flip onto an anused spot on the hot side, repeat previous steps. Medium-rare max on steaks. Especially good cuts. I love to cook, and love to try new food. I grill out at least 3 times per week regardless of the weather. A Big Green Egg is the tool of choice for grilling/smoking, though if I'm cooking for a large crowd I'll use my Traeger pellet smoker as I can fit a lot more on it. I made a great filet with crab meat with a Diane sauce this past weekend. Roasted garlic fingerling potatoes and grilled asparagus as sides. Probably going to do some cedar plank salmon this weekend, or possibly some Chilean sea bass. Our food immigrated here too , Seeing as I have a long German heritage, I'm a meat and potatoes guy. Staples of the American diet have became ingrained in the European diets that you don't even notice it. Europe as a continent has by far the worst flora in the world. Besides Antarctica and Auskralia. Which isn't really saying much.

Yes, and corn is the basis for the majority of processed food you find in the grocery store these days. Because of government subsudies. So 40 is probably eating a bunch of junk food.

I like my food to be food. No ingredients I can't pronounce, no artificial this or that, no chemicals and no overly processed crap. I haven't eaten at a fast food restaurant in 20 years.
I have also been eating less red meat but, every once in awhile I do get a craving for a nice juicy medium cooked burger. There is a super spot here in Portland that cook a gorgeous burger and when I have that craving I try to go there. They also have a great bartender who makes fantastic drinks! So it is a win-win evening!
I can't remember the last steak I had....probably 4th of July, 2016.

PDX where's your burger joint? I know you didn't ask me, but Fireside Grill by Washington Square have my fave burgers. I had one at the Multnomah Whiskey Library last weekend that was pretty darn good too.

I also don't want either one FLAME BURNT. Seared = burnt or "well marbled" which = fat to me. If I wanted to chew on fat for hours I would just order some whale blubber.

I like everything, I really enjoy ethnic food, (Thai, Chinese, Indian, Sommali, Nigerian, Jamaican). I shop at Asian super markets and Mexician grocery stores to find new flavors and what not, if you are in columbus go to sagara on morse, super huge asian market, you can also get spices in bulk, like $2 for a (kilo)pound of cayenne pepper.
From the ethnic spots I have eaten, goat, lamb all random parts of the pig ect... I will try a just about anything.
I love wings and all pub food, like if I could eat pub food everyday I would, my wife yells at me a lot so I can't eat pizza, wings and mozzarella sticks everyday. =/
I like hot food, like hot enough to hurt but not hot enough to kill you. So I am down with jalapenos on everything. I always order everything extra spicy, except when I eat indian food or Thai. I had Thai food from this place called Bangkok here in Columbus the other night and they put at least 15 chopped of thai peppers in my dish. I can eat like 3 or 4 before I tap out. thai peppers are equivalent to the Habeneros.
I don't eat fast food (except like sandwich spots) or chain food unless I am drunk or super desperate.

That fat strip is crispy and charred, then I cut into my bloody steak and combine a little bit of both into one bite..... Life changing!!!!

I have taken mini vacations to NYC, Paris, and Florence, Italy to attend cooking schools. Some 2-3 days, others 4-5 days.
All were saucier classes. I can cook the food as well as any. Cooking a nice beef or veal steak, or chicken, or fish filet isn't all that hard, It's all about the sauce IMO. The rule is you can screw up the meat a bit if the sauce, or in this country, the gravy is good enough.
I figured if I could make classic French and Italian sauces, I'd have it covered and be able to cover it all. If you can cover the Mother sauces, you can vary at will. Make the basic Mother sauce, then add your flair to meet the dish.
I mean, a plate of pasta isn't all that exciting. Any idiot can boil pasta Al Dante. The sauce is what makes the dish. Same with diner food. Anybody can chicken fry a steak. It's all about the white gravy on top.

As for how I like it cooked, good beef steak, med rare. Chicken, done. Same with pork. I know times are changing, but when I was young, pork was cooked at least med well. I like it that way today, except bacon. Mom cooked it semi limp, so naturally, I like it the way Mom cooked it.
Eggs, soft boiled to hard boiled, or any other way works for me. Fish, sushi to grilled trout. Shell fish, bring it on.
Veggies.....not one I won't eat. I like them all.
About the only "food" I don't like is organ meat. No liver, kidney or tripe for me. I don't care how much of my delicious sauce I cover it with.....nope. If it's a mammel and it's inside the skeletal system, forget it. Give it to the dogs and cats and make them happy.

Have you guys tried Uncle Ben's Ready Rice?  It's amazing. 1) You squeeze the unopened packet (to loosen the rice a little). 2) Tear open the top ~ 2 inches to vent, 3) Throw the whole packet in the microwave for 90 seconds. Take it out and pour the hot rice in a bowl ready to serve. Comes in ~ 6 styles of rice. I sprinkle it with shredded cheese and soy sauce. Maybe throw in a diced, uncooked red pepper. Really good, fast and convenient.

I have a hard time with Indian/Pakistani food, Brussel sprouts, spinach and a few others, but I can chow down on just about everything.

Indian and Thai are my favorite ethnic foods. Moroccan and Ethiopian dishes are also wonderful. Lamb is tremendous meat! As cows are holy creatures in India you wont get "beef" curry but, lamb curry is awesome. I've had goat too. Very popular in the Caribbean. Rabbit/hare is also good. It is pretty popular in the UK. Rabbit is a bit like venison...very rich and lean. Pure muscle, pretty much.
